Camp Cookery: Thanksgiving by Katin Explorer America Y'all
Thanksgiving is just around the corner and we can hardly wait to savory some delicious turkey, stuffing and more! 
Our Explorer Jeremy Pawlowski (@americayall) is the king of "camp cookery" and making amazing dishes while adventuring in the outdoors. 
We followed his recent adventure and watched as he cooked his way through his camp's Thanksgiving dinner.

Thanksgiving Camp Cookery - Part Two


Turkey (Based on a standard sized cast iron dutch oven you'll want a bird that is under 7 pounds)

3 cups of chicken stock

4 coves of garlic

1 red onion

Herb blend (Rosemary, Thyme, Sage)

1 stick of butter


Cooking an entire Thanksgiving feast while camping isn't as daunting as it sounds, it really all comes down to having enough wood to keep a fire going for 3+ hours while the turkey cooks. Other than that it actually might be easier to cook a holiday meal in the great outdoors rather than in a cramped kitchen. 



The only "trick" I can think of comes into play right at the beginning.Take an aluminum pie tin, poke a few holes in it and put it upside down in the bottom of the dutch oven. This will keep the turkey off of the direct heat and allow the stock to steam the bird a bit.  

To keep the turkey at a consistent heat you'll actually want to keep the fire burning in a separate part of the pit. As the roaring flames die down push the coals underneath the dutch oven. Cooking with the coals rather than the fire itself will allow you to have much more control. It will also keep the turkey cooking in something more like an oven rather than being scorched with a blow torch.



You'll want to periodically spin the cast iron to make sure all sides of the turkey are cooked evenly. Other than that it's really just a waiting game, the inside of the turkey should read 180 degrees before you pull it off the fire. While you're waiting you can start to prep some of the other parts of the meal.


Once you're turkey is done pull it off the fire and turn to the camp stove so you can get started on the last two side dishes. You want the turkey to sit for 20 minutes before you carve it anyways.

And last but not least, the stuffing. Now i'm not saying it's impossible, but making a stuffing from scratch without the luxuries of home seems like a real headache. If you're camping you'll need to cut corners every once in a while and this was one of those times. We used some good ol' boxed stuffing for this Thanksgiving meal, it's quick, portable and still tastes great.

This week's Katin Vault discovery features another epic photograph straight from the Kanvas by Katin surf shop. 
This is a photograph from 1970 of Nancy Katin with local surfer rocking his custom trunks outside the Katin shop.
Nancy became known as the “First Lady of Surfing,” not only because of her quality clothing, but also because she genuinely befriended the surfers that came to her shop, and even acted as second mom to most. Despite the initial local dislike for the sport of surfing, Nancy always made sure that Katin’s small surf shop had a counter, with a couch and chairs, for any and all surfers to kick back, relax and swap stories.

Katin x A Walk On Water Event Recap
Thanks to everyone who came out to celebrate surf therapy for family and friends with A Walk On Water! 
Here are some highlights from the Bolsa Chica event. 

AWOW, in company with Katin, is comprised of a dedicated family of watermen sharing the therapeutic powers of the ocean with those in need. In addition to offering surf therapy to children with special needs, families in need are provided an entire day of relief, which includes healthy helpings of gourmet breakfast and lunch meals. These events have always been and will always be completely free to the families who attend.

AWOW hosts multiple surf therapy events throughout the year for families of children with special needs and their friends. Surfing works to build self-confidence as the kids experience the incomparable thrill of riding a wave and the healing power of the ocean. Katin is excited to join AWOW in sharing the excitement of surfing with these kids by supporting this powerful cause.

In the early 1950s Nancy and Walter Katin were in the business of making canvas boat covers. It was upon request from a local surfer that they made the first pair of custom canvas surf trunks. Although the Captain wanted to maintain sole focus on canvas boat covers and sails, word quickly spread about these nearly indestructible surf trunks. By the early 1980s, surf-wear had officially skyrocketed. Some of the biggest names in surfing, from Shaun Tomson and Peter Townsend to Reno Abillero and Gerry Lopez, sported the iconic Katin surf trunks. In 1977, Nancy initiated the annual Katin Pro/Am Team Challenge on the north side of the Huntington Beach pier, allowing amateur surfers the chance to compete alongside the pros. Surf legends such as Kelly Slater and Tom Curren competed and won the Katin Pro/Am. After Nancy passed away in 1986, she left the business to her loyal friend and Katin seamstress Sato Hughes, who began sewing surf trunks for the Katins in 1961, and still crafts custom surf trunks with her own two hands today. Katin takes pride in making California’s first surf trunk and continues its commitment to selling high-quality, lifestyle apparel and durable surf trunks.




A WALK ON WATER provides Surf Therapy to individuals with special needs.

We do this by hosting Surf Therapy events that celebrate and honor courageous kids, adults and their families.  For one beautiful day at the beach, there are no labels.  Everyone is an athlete. The goal of Surf Therapy is for the athletes to feel the thrill and confidence that only "A Walk On Water" can provide.  Their families are fully supported and cared for as they share a much deserved day of fun, relaxation and respite.
